The ordering gap in Orem

Every city on the Wasatch Front has an ordering gap. Orem's is among the deepest — and its invisible restaurants are some of the busiest anywhere in the corridor.
In my verified catalogue, Orem counts 67 independent restaurants. 44 of them — 66%, two of every three — have no ordering channel of their own, far above the corridor-wide 56% and behind only West Valley City among the Front's six largest restaurant cities. In a city built on University Parkway traffic and some of the state's busiest retail corridors, the overwhelming majority of independent kitchens can only be ordered from online through someone else's platform — 17 of the 44 through DoorDash-hosted Storefront pages, and the rest through marketplace listings at 15–30% commission. (After hand verification, not one Orem independent is truly offline — the demand is all there; the ownership isn't.)
Busy doesn't mean reachable
Here's Orem's stat to sit with. Forty-three of those 44 restaurants have more than a hundred Google reviews, and as a group they average about 1,410 reviews at 4.4 stars — among the most-reviewed gap groups in the corridor. Orem's problem is emphatically not restaurants nobody wants. It's beloved, high-traffic kitchens — led, as everywhere on the Front, by its independent Mexican restaurants — with no owned way to capture the demand they've already earned.
The thin other side
Only 23 Orem independents run their own ordering — and the mix is odd: Toast, the corridor's dominant vendor, has just 4 installs here, behind Olo's 6. Orem is the city where first-party ordering tech has penetrated least deeply relative to its size — and where DoorDash's hosted arrangement has penetrated most: a quarter of the city's independents run on Storefront. Orem's online ordering, to an unusual degree, belongs to the platforms.
What 66% costs
A single Orem restaurant doing $4,000 a month through the apps at 25% pays $12,000 a year in commissions. Multiply across 44 mostly-busy, heavily reviewed kitchens and Orem's annual commission outflow plausibly clears half a million dollars — much of it on regulars who'd happily order direct if direct existed.
