The ordering gap in Provo

Provo is a college town with a college town's dining economics: tens of thousands of students who order food on their phones as a default setting, plus a downtown Center Street scene that's turned into one of Utah County's best food strips. If any city's independents should be reachable online, it's this one.

27 of Provo's 59 independent restaurants — 46% — aren't. No first-party online ordering: a website you can't order from, no website at all, or a link that routes the hungriest, most phone-native customer base in Utah straight to a delivery app charging 15–30% commission.

The best-rated gap in the corridor

Provo's signature stat: its invisible restaurants are the highest-rated of any major city's on the Wasatch Front. All 27 have more than a hundred Google reviews, averaging about 1,057 each — at 4.5 stars, a tick above every other big city's gap group. Led by a dozen independent Mexican kitchens and a strong Thai bench, these are exactly the restaurants the corridor data keeps finding: excellent, established, and unreachable the moment a student opens a phone.

The 24 who are reachable

The other side is healthier here than in Orem next door: 24 Provo independents run their own ordering, with Toast leading at 8, then Square, Olo, Clover, and ChowNow. Another 3 lean on DoorDash Storefront alone — worth reading the fine print on. Provo's gap isn't a tech desert; it's a filter. The kitchens with $$ menus and steady volume bought ordering software. The budget spots students actually live on largely didn't.

The college-town math

A campus-adjacent restaurant doing $5,000 a month through the apps at 25% pays $15,000 a year — on a customer base where repeat orders dominate by the nature of a semester. Across 27 restaurants, Provo's annual commission outflow plausibly runs into the hundreds of thousands.
